The use of chocolates, compounds and cocoa powders in frozen applications presents special challenges and opportunities. In frozen products, for example, flavor profiles may require optimization to ensure desirable chocolate impact even in the cold mouth. For chocolate and ice cream coatings, it is important that exactly the same amount of chocolate is applied each time an ice cream is dipped. Ultra-short drying times are required to allow smooth packaging operations. Adjusted formulations allow a completely covered ice cream that sets in the shortest possible time, without defects such as bleeding or cracking.
